Italian Beef Stuffed Potatoes

Pierce potatoes with fork and microwave on high for 12 minutes or until tender.
Wrap in foil to keep warm. Brown meat with onion and garlic then drain fat.
Stir in tomatoes and zucchini. Bring to a boil then reduce heat and simmer 10 minutes.
Slice potatoes in half, lightly mash centres and top with tomato mixture.
Sprinkle with cheese and serve immediately.
