Slow Cooker Red “Beef” Curry

In slow cooker, combine Gardein® Plant-Based Be'f Tips, Aylmer® Crushed Tomatoes, curry paste, olive oil, ginger, lemongrass, onion, garlic, salt and pepper; cook on Low for 8 hours or on High for 4 hours until Gardein® Plant-Based Be'f Tips are tender and sauce is thickened.
Meanwhile, cook rice according to package directions. Fluff with fork and set aside.
Stir coconut milk and lime juice into curry mixture. Serve over rice; top with peanuts and cilantro.
For an additional kick, add 1 small seeded and minced Thai red chili pepper to slow cooker.
