Ingredients
- 2 tbsp (30 mL) vegetable oil, divided
- 2 eggs
- 10 large shrimp, peeled
- 1 egg, beaten
- 1/2 cup (125 mL) VH® General Tao Stir-Fry Sauce
- 1/4 cup (60 mL) sliced green onions, divided
- 1 tbsp (15 mL) minced fresh ginger
- 1 garlic clove, minced
- 6 large asparagus, sliced diagonally
- 2 cups (500 mL) cooked long-grain rice or noodles
- 1 tbsp (15 mL) toasted sesame seeds

Step one
Heat 1 tbsp (15 mL) oil in nonstick skillet set over medium heat; scramble eggs for 3 to 5 minutes or until eggs are set. Transfer to small bowl; set aside.

Step two
Heat remaining oil in same skillet; cook shrimp, VH® General Tao Stir-Fry Sauce, 2 tbsp (30 mL) green onions, ginger and garlic for 3 to 5 minutes or until shrimp are curled. Add asparagus; cook for 3 to 5 minutes or until vegetables are tender-crisp and shrimp are cooked through.

Step three
Serve stir-fry on bed of rice. Top with reserved scrambled eggs, remaining green onions and sesame seeds.
