- PAM® Original No-Stick Cooking Spray
- 5 pounds (2.26 kg) boneless pork loin roast
- 1 teaspoon (5 g) caraway seeds
- 1 teaspoon (5 g) cinnamon
- 1 teaspoon (5 g) ground mustard
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2.5 g) ground black pepper
- 6 apples, cored, cut into 1-inch (2.5 cm) slices (6 med = about 2 lb
- 4 medium sweet potatoes, peeled, cut into 1-inch pieces (4 med = about 2 lb (0.90 kg))
- 2 tablespoons (30 mL) canola oil

Step one
Preheat oven to 325°F (162oC). Spray large roasting pan and rack with cooking spray; place roast, fat-side up, on prepared rack. Combine caraway seeds, cinnamon, mustard, salt and pepper in small bowl; spread evenly over roast. Toss apple slices and potato pieces with oil; arrange around roast. Insert meat thermometer in center of thickest part of roast.

Step two
Roast 1 to 1 1/2 hours or until meat thermometer reaches 160°F (71°C) for medium doneness. Cover loosely with aluminum foil. Let stand 15 minutes.

Step three
Cut roast into slices; arrange on serving platter. Surround with the apples and sweet potatoes.
