Ingredients: 1 box Duncan Hines Moist Deluxe Spice Cake Mix; ¾ cup unsweetened almond milk (or skim, 2%, soy or coconut); 1 cup Greek vanilla yogurt; ½ cup egg whites; 2 Tbsp. light olive oil; 2 bananas, mashed; 1½ cups granola (preferably with berries, seeds and nuts)

Ingredients

1 box Duncan Hines Moist Deluxe Spice Cake Mix
¾ cup unsweetened almond milk (or skim, 2%, soy or coconut)
1 cup Greek vanilla yogurt
½ cup egg whites
2 Tbsp. light olive oil
2 bananas, mashed
1½ cups granola (preferably with berries, seeds and nuts)

Step one

Preheat oven to 350°F. Place paper liners in muffin pan(s).
Step two

Combine cake mix, almond milk, yogurt, egg whites and olive oil in large bowl.
Step three

Beat with an electric mixer at medium speed for 2 minutes. Stir in bananas with wooden spoon. Pour into prepared pans. Sprinkle evenly with granola.
Step four

Bake 18 minutes or until toothpick inserted in centre comes out clean.
Step five

Cool on wire rack 15 minutes. Remove cupcakes from pan and cool completely.
