Ingredients
- 1/2 lb (250 g) Brussels sprouts, halved
- 1 lb (500 g) boneless and skinless chicken breasts, sliced into 1/2-inch (1 cm) thick pieces
- 1 can (540 mL) Aylmer® Accents Garlic & Olive Oil Petite Cut Stewed Tomatoes
- 1/2 tsp (2 mL) each salt and pepper
- PAM® Original Spray
- 2 cups (500 mL) shredded mozzarella cheese
- 1/2 cup (125 mL) grated Parmesan cheese
- 1/2 cup (125 mL) bread crumbs
- 2 tbsp (30 mL) olive oil
Directions

Step one
Preheat oven to 400°F (200°C). Toss together Brussels sprouts, chicken, Aylmer® Accents Garlic & Olive Oil Petite Cut Stewed Tomatoes, salt and pepper. Transfer to 13- x 9-inch (3.5 L) baking dish coated with cooking spray.

Step two
Scatter mozzarella over chicken mixture. Toss together Parmesan, bread crumbs and olive oil; sprinkle over top.

Step three
Bake for 35 to 40 minutes or until golden brown and bubbly, chicken is cooked through and Brussels sprouts are tender.
Tips
Garnish with a sprinkle of finely chopped fresh basil or parsley if desired.
