- 2 Peeled Sweet Potatoes cut into 1 ½ inch
- 1 Tsp Turmeric
- 1 Tsp Cumin
- 2 Tbsp Honey
- 1 Tsp Crushed Coriander Seed
- 3 Cups of Zuppa Di Ceci (unblended)
- 3 Cups Cooked Couscous
- 1 Cup Labneh, Sour Cream or Yogurt

Step one
Learn how to make Hunt's Zuppa Di Ceci here! Take the cut Sweet Potato and place in enough water just to cover it. Add salt to season, honey and smashed coriander seed.

Step two
Bring potatoes to a boil and let the water evaporate until it's all gone. Add olive oil, diced tomato and soup that’s not been pureed. Add cumin, turmeric and some fresh coriander.

Step three
Let the curry come to a boil and simmer for 1/2 hour. Serve with warm couscous, fresh coriander and a spoon full of labneh with olive oil.
