Ingredients
- 2 tbsp (30 mL) sesame oil
- 1 bag (750 g) frozen mixed vegetables
- 1 can (540 mL) chickpeas, drained and rinsed
- 1/2 jar (177 mL) VH® Teriyaki Stir-Fry Sauce
- 1/2 cup (125 mL) chopped toasted cashews
- 3 green onions, thinly sliced
- 2 cups (500 mL) cooked rice
Directions

Step one
Heat oil in large skillet set over medium-high heat; cook vegetables and chickpeas, stirring occasionally, for 8 to 10 minutes or until heated through.

Step two
Stir in VH® Teriyaki Stir-Fry Sauce; cook for 3 to 5 minutes or until mixture is heated through.

Step three
Sprinkle cashews and green onions over top. Serve over rice.
Tips
Use your favorite frozen vegetable mix.
Change things up by using a different VH® Stir-Fry Sauce.
