Ingredients
- 1 can (398 mL) AYLMER® ACCENTS® FIRE ROASTED DICED TOMATOES
- 1/2 cup (125 mL) diced green pepper
- 1/2 cup (125 mL) diced yellow pepper
- 1/2 cup (125 mL) diced cucumber
- 1/4 cup (60 mL) olive oil
- 2 tbsp (30 mL) red wine vinegar
- 1/4 cup (60 mL) thinly sliced fresh basil

Step one
- Toss together tomatoes, green pepper, yellow pepper and cucumber.
- Stir in olive oil and vinegar until well combined. Sprinkle with basil. Refrigerate until well chilled.
