Remove sausage casings and crumble meat then brown.
Drain off fat. Add onion, pepper, and zucchini and sauté for 2 minutes.
Stir in tomatoes and bring to a boil, then reduce heat and simmer uncovered for 15 minutes.
Spoon into sliced buns and serve immediately.
