Spicy Chicken Quesadillas

Ingredients
- 2 cups (500 mL) shredded cooked rotisserie chicken
- 1 can (540 mL) Aylmer® Accents® Spicy Red Pepper Petite Cut Stewed Tomatoes
- 4 large flour tortillas
- 1 cup (250 mL) shredded Monterey Jack cheese
- 1/2 cup (125 mL) guacamole (optional)
- 1/2 cup (125 mL) sour cream (optional)
- Pam® Original Cooking Spray
Directions

Step one
In skillet set over medium heat, combine chicken and tomatoes; simmer for 7 to 10 minutes or until thickened slightly and liquid has evaporated.

Step two
Spread about 1/2 cup (125 mL) chicken mixture over one side of each tortilla. Sprinkle cheese evenly over top; fold each tortilla in half over filling.

Step three
Coat clean skillet with cooking spray; heat over medium heat and fry quesadillas in two batches, turning once, for 2 to 3 minutes or until crisp and golden.

Step four
Cut each quesadilla into thirds. Serve with guacamole and sour cream (if using).
Tips
Serve with spicy green salsa or tomato salsa if desired.
This dish is also delicious made with Aylmer® Accents® Garlic and Olive Oil Petite Cut Stewed Tomatoes.
