Ingredients

1 1/2 lb (750 g) boneless skinless chicken thighs
1 jar (341 mL) VH® Medium Garlic Marinade
2 tbsp (30 mL) honey
2 tbsp (30 mL) rice wine vinegar
2 tbsp (30 mL) granulated sugar
2 tsp (10 mL) salt
2 cups (500 mL) thinly sliced cucumbers
4 brioche buns, split
1 jalapeño pepper, thinly sliced

Step one

Add chicken to slow cooker; pour marinade and honey over top. Cover and cook on Low for 4 to 6 hours or High for 2 to 3 hours or until chicken is very tender. Shred chicken using two forks. Return to slow cooker and toss with cooking liquid. Set on Warm.
Step two

Meanwhile, in small bowl, stir together rice wine vinegar, sugar, salt, and 1 tbsp (15 mL) water; add sliced cucumbers. Let stand for 15 minutes; drain well.
Step three

Assemble shredded chicken in buns with pickled cucumbers and jalapeños.
