Ingredients
- 60 mL vegetable oil
- 250 g extra-firm tofu, drained, patted dry and cut into 2.5-cm cubes
- 250 g shiitake mushrooms, stemmed and sliced
- 2 cloves garlic, minced
- 6 green onions, cut into 5-cm lengths
- 1.25 L baby spinach
- 1 jar (355 mL) VH® Sweet N Spicy Szechwan Stir Fry Sauce
- 375 g lo mein noodles, prepared according to package directions
- 1 red fresh chile pepper, thinly sliced

Step one
In large wok or skillet set over high heat, add oil. Add tofu and cook, stirring occasionally, for 5 to 8 minutes or until crispy. Using slotted spoon, transfer to paper towel–lined plate.

Step two
Add mushrooms and garlic to wok over high heat; cook, stirring occasionally, for 3 to 5 minutes or until mushrooms are golden and tender. Add green onions and spinach; cook for 1 or 2 minutes or until spinach is wilted.

Step three
Pour in Szechwan stir-fry sauce; bring to a boil. Add noodles and tofu; cook, stirring occasionally, for 2 to 3 minutes or until heated through. Transfer to serving platter and garnish with chile pepper.
Tips
For a different kind of heat, substitute the chile pepper with hot pepper flakes.
