Stir together 1 cup (250 mL) Earth Balance® Creamy Peanut Butter and Flaxseed, peanuts, coconut flour, maple syrup and vanilla extract until well blended. Spread into parchment paper–lined 8-inch (20 cm) square pan; smooth top. Set aside.
In heatproof bowl set over larger saucepan of barely simmering water, heat together vegan chocolate chips and remaining peanut butter. Stir constantly, for 5 to 7 minutes or until melted. Let cool slightly.
Spread over peanut butter layer in pan, smooth top. Freeze for 30 minutes or until firm. Remove from pan and cut into bars.
Sprinkle a pinch of flaked sea salt over top if desired.
