Preheat oven to 200°C. Line baking sheet with foil.
In medium skillet set over medium heat, add cooking spray. Add mushrooms and cook, stirring occasionally, for 3 to 5 minutes or until starting to become tender. Add onion, artichokes, green pepper, red pepper and yellow pepper; cook, stirring occasionally, for 3 to 5 minutes or until softened. Stir in Italian seasoning and hot pepper flakes; set aside.
On baking sheet, arrange baguette quarters with cut sides up. Top each evenly with tomato sauce, cheese and vegetable mixture.
Bake for 12 to 15 minutes or until bread is toasted and cheese is melted. Cut each baguette pizza quarter into 3 slices.
Substitute mozzarella cheese with shredded Swiss or aged white Cheddar as a variation.
