In medium bowl, gently stir together tuna, mushrooms, water chestnuts, breadcrumbs, egg, green onions, mayonnaise, salt and pepper. Divide mixture into 8 even portions and shape into discs.
In large skillet set over medium heat, mist with cooking spray. Add tuna cakes and cook, turning once, for 10 to 14 minutes or until browned.
Serve with cherry and plum dipping sauces.
