Ingredients: 3 lb (1.4 kg) chicken drumsticks; 1/2 tsp (2 mL) each salt and pepper; 1 tbsp (15 mL) canola oil; 4 slices bacon, chopped; 1 onion, diced; 3 cloves garlic, minced; 1 bottle (355 mL) beer; 1 can (283 g) Ro*Tel® Original Diced Tomatoes & Green Chilies; 1 tsp (5 mL) brown sugar; 2 bay leaves; 2 tbsp (30 mL) finely chopped fresh parsley

3 lb (1.4 kg) chicken drumsticks

2 bay leaves

Step one

Season chicken with salt and pepper. Heat oil in Dutch oven set over medium heat; cook chicken for 8 to 10 minutes or until browned all over. Remove chicken from pan; set aside.
Step two

Cook bacon for 2 to 3 minutes or until fat starts to render and bacon is browned around edges. Stir in onion and garlic; cook for 2 to 3 minutes or until onion is slightly softened.
Step three

Stir in beer, Ro*Tel® Original Diced Tomatoes & Green Chilies, brown sugar and bay leaves; bring to boil. Cook until most of the liquid evaporates.
Step four

Return chicken to pan. Reduce heat to medium-low; cover and cook for 45 to 60 minutes or until chicken is very tender and sauce is thickened. Remove bay leaves. Sprinkle with parsley.
