Sprinkle cheese evenly over half of each tortilla; top with Ro*Tel® Original Diced Tomatoes & Green Chilies and bacon. Fold tortilla over to enclose filling.
Brush half of the oil over bottom of large skillet set over medium heat; cook quesadillas, in batches, for 2 to 3 minutes per side or until golden brown and cheese is melted. Cut each quesadilla into 4 wedges. Top with sour cream and lettuce.
Substitute guacamole for sour cream if desired.
