Ingredients
- 8 lamb chops
- 1 cup peeled, diced carrots
- 2 cups diced fennel
- 2 cups diced onion
- 1 can Aylmer® Accents® Original Chunky Classic tomatoes (540 ml.)
- 1/4 cup red wine vinegar
- 2 tbs. brown sugar
Directions

Step one
Brown lamb chops in the bottom of an oven-proof pan.

Step two
Add carrots, fennel and onion and sauté until tender.

Step three
Add Aylmer® Accents® Original Chunky Classic tomatoes, red wine vinegar and brown sugar.

Step four
Cover and place in a 400º oven for 35 minutes.

Step five
Serve with scalloped potatoes and green beans or asparagus.
