Ingredients
- PAM® Original Cooking Spray
- 3 boneless skinless chicken breasts, cut into bite sized pieces
- 4 cups (1 L) frozen Asian mix vegetables
- 1 cup (250 mL) VH® Orange Ginger Stir-Fry Sauce
- 1 tsp (5 mL) chicken bouillon powder
- 2 tsp (10 mL) sesame oil
- 1/2 cup (125 mL) cashews
- 1/4 cup (50 mL) chopped green onion (optional)
- 1 cup (250 mL) white or basmati rice
Directions

Step one
Cook rice according to package instructions.

Step two
Spray large non-stick skillet with PAM® Original Cooking Spray; heat over medium-high heat. Add chicken; stir-fry for about 5 minutes or until cooked through.

Step three
Add vegetables. Stir until heated through. Stir in VH® Orange Ginger Sauce, bouillon powder and sesame oil.

Step four
Just before serving, stir in cashews. Serve over rice. Green onion is a beautiful addition.
