Honey Garlic Kimchi Fried Rice

Heat butter in wok or large skillet set over medium heat. Cook bacon for 3 to 5 minutes or until starting to crisp around edges; drain, leaving 2 tbsp (30 mL) of fat in pan. Stir in carrots and edamame. Cook for 2 to 3 minutes or until starting to soften.
Add cooked rice, green onions and kimchi; cook for 3 to 5 minutes. Stir in VH® Honey Garlic Marinade; bring to boil. Cook for 6 to 8 minutes or until sauce is reduced and rice is heated through.
Divide among 4 bowls; top with fried eggs (if using).
• Sprinkle with toasted sesame seeds or cashews for a crunchy finish.
• Use basmati or jasmine rice if desired.
