Honey Garlic Kimchi Fried Rice

Ingredients
- 2 tbsp (16 g) butter
- 4 slices bacon, diced
- 1 cup (128 g) matchstick carrots
- 3/4 cup (96 g) shelled frozen edamame, thawed
- 1 pouch (240 g) long grain rice, cook accordioning to package directions
- 4 green onions, sliced
- 1 cup (125 g) kimchi
- 1/2 jar (170 mL jar) VH® Honey Garlic Marinade
- 4 eggs, fried (optional)
Directions

Step one
Heat butter in wok or large skillet set over medium heat. Cook bacon for 3 to 5 minutes or until starting to crisp around edges; drain, leaving 2 tbsp (30 mL) of fat in pan. Stir in carrots and edamame. Cook for 2 to 3 minutes or until starting to soften.

Step two
Add cooked rice, green onions and kimchi; cook for 3 to 5 minutes. Stir in VH® Honey Garlic Marinade; bring to boil. Cook for 6 to 8 minutes or until sauce is reduced and rice is heated through.

Step three
Divide among 4 bowls; top with fried eggs (if using).
Tips
• Sprinkle with toasted sesame seeds or cashews for a crunchy finish.
• Use basmati or jasmine rice if desired.
