Ingredients
- 1 bag (76 g) Orville Redenbacher Light Buttery Microwave Popcorn
- 1 tbsp (15 mL) grated lime zest, divided
- 1 1/4 tsp (6 mL) chili powder, divided
- 3 tbsp (45 mL) lime juice
- 2 tbsp (30 mL) mayonnaise
- 2 tbsp (30 mL) sour cream
- 1 tbsp (15 mL) olive oil
- 1 clove garlic, minced
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1/2 tsp (2 mL) ground cumin
- 6 cups (1.5 L) mixed greens
- 1 cup (250 mL) halved cherry tomatoes
- 1 cup (250 mL) corn kernels, cooked
- 1/3 cup (75 mL) finely crumbled feta cheese
- 2 green onions, thinly sliced
- 2 tbsp (30 mL)finely chopped fresh cilantro
Directions

Step one
Prepare popcorn according to package instructions; toss with 2 tsp (10 mL) lime zest and 1 tsp (5 mL) chili powder. Set aside.

Step two
Whisk together lime juice, mayonnaise, sour cream, oil, garlic, salt, pepper, cumin, and remaining lime zest and chili powder.

Step three
Toss together greens, tomatoes, corn kernels, feta, green onions and cilantro.

Step four
Divide salad among serving plates. Just before serving, drizzle with dressing and sprinkle popcorn over top.
Tips
For added flavour, use leftover grilled corn.
