Popsicle Brownie Bites

Directions

• Step one

  Preheat oven to 180°C.

• Step two

  Prepare brownies according to package directions for fudge-like brownies. Let cool completely in pan on wire rack. Cut brownies into eight 5 x 10-cm bars.

• Step three

  In medium bowl, blend frosting with desired food colouring gel. (If desired, divide frosting between two or among three small bowls and blend each with a different food colouring gel.)

• Step four

  Carefully insert a lollipop stick into short end of each brownie.

• Step five

  Spread frosting over sides and tops of a brownie and decorate with sprinkles. Transfer to Styrofoam block. Repeat with remaining lollipop sticks, brownies and sprinkles. Transfer Styrofoam block to refrigerator and chill for 30 minutes or until frosting is set.
