Ingredients
- PAM® Original Non-Stick Cooking Spray
- TURKEY GRAVY:
- 4 tablespoons (32 g) Earth Balance® Vegan Cooking & Baking Stick
- 1 small onion, chopped
- 1/3 cup (45 g) all-purpose flour
- 3 cups (750 mL) turkey or chicken stock
- 1 bay leaf
- 1/4 teaspoon (1.25 g) dried thyme leaves
- 1/4 teaspoon (1.25 g) dried sage leaves
- 1/2 teaspoon (2.5 g) kosher salt
- 1/4 teaspoon (1.25 g) ground black pepper
- 3 cups (384 g) chopped cooked turkey
- 2 cups (256 g) mixed vegetables
- DUMPLINGS:
- 2 cups (136 g) all-purpose flour
- 3/4 teaspoon (3.75 g) baking powder
- 1/2 teaspoon (2.5 g) kosher salt
- 1/4 teaspoon (1.25 g) baking soda
- 4 tablespoons (32 g) Earth Balance® Vegan Cooking & Baking Stick, cut into small cubes
- 2 tablespoons (16 g) chopped fresh herbs (parsley and/or chives) OR 1 tablespoon (8 g) dried herbs
- 3/4 cup (180 mL) low-fat buttermilk
- 1 egg

Step one
Preheat oven to 400°F (205oC). Spray large oven-safe skillet and a large piece of aluminum foil with cooking spray.

GRAVY: Melt butter in skillet over medium-low heat. Cook onion in butter until tender, about 5 minutes. Whisk in flour, cook 1 minute. Whisk in stock, bay leaf, thyme, sage, salt and pepper and bring to a boil, whisking constantly until thickened.

Step three
Stir in leftover turkey and mixed vegetables and bring to a boil. Reduce heat and simmer 10 minutes, until turkey and vegetables are heated through. Remove from heat and discard bay leaf.

DUMPLINGS: Stir together flour, baking powder, salt and baking soda in large bowl. Cut in cold butter until mixture resembles coarse crumbs. Stir in herbs, buttermilk and egg just until moistened and mixture forms a ball.

Drop ¼ cup (32 g) dumplings over turkey and gravy in skillet, about 12 dumplings total, evenly spaced over the top of the skillet. They will expand as they bake and cover the skillet.

Step six
Carefully cover skillet with foil, sprayed side down. Bake, covered, 25 to 30 minutes, until dumplings have expanded and they’re firm. If desired, remove foil and continue baking until dumplings are browned, about 10 minutes.
