Bake Gardein Meatless Meatballs according to package directions.
Meanwhile, in bowl, whisk together oil, lemon zest, juice, shallot, mustard, salt and pepper. Add quinoa; toss until well coated.
Divide quinoa evenly among 4 bowls. Top with Gardein Meatless Meatballs, avocado, microgreens and pumpkin seeds.
Substitute walnuts, almonds or hazelnuts for pumpkin seeds if desired.
