Ingredients
- 1 pkg (360 g) Gardein Meatless Meatballs
- 1/3 cup (75 mL) Olive oil
- 1 tsp (5 mL) Lemon zest
- 3 tbsp (45 mL) Lemon juice
- 2 tbsp (30 mL) Minced shallot
- 1 tsp (5 mL) Dijon mustard
- 4 cups (1 L) Cooked quinoa
- 1 Ripe avocado, halved, pitted, peeled and sliced
- 4 cups (1 L) Microgreens
- 1/3 cup (75 mL) Toasted pumpkin seeds
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
Directions

Step one
Bake Gardein Meatless Meatballs according to package directions.

Step two
Meanwhile, in bowl, whisk together oil, lemon zest, juice, shallot, mustard, salt and pepper. Add quinoa; toss until well coated.

Step three
Divide quinoa evenly among 4 bowls. Top with Gardein Meatless Meatballs, avocado, microgreens and pumpkin seeds.
Tips
Substitute walnuts, almonds or hazelnuts for pumpkin seeds if desired.
