Ingredients
- 2 cans (400 mL each) Coconut milk (not low-fat)
- 2/3 cup (150 Ml) Earth Balance Creamy Peanut Butter
- 1/4 cup (60 mL) Melted coconut oil, cooled slightly
- 1/4 cup (60 mL) Agave syrup

Step one
Refrigerate cans of coconut milk for at least 4 hours or overnight. Open each can and carefully spoon out just the firm solidified layer on top into bowl (reserve liquid for another use). Using electric mixer, beat solidified coconut milk until light and fluffy; set aside.

Step two
In separate bowl, beat together peanut butter, coconut oil and agave syrup until smooth. Beat in coconut whipped cream until fluffy.

Step three
Divide mousse into 4 Mason jars or ramekins. Refrigerate for about 4 hours or until thoroughly set.
Tips
Before serving, garnish with toasted peanuts or a drizzle of dark chocolate.
