Ingredients
- 15 mL Pure Wesson® Vegetable Oil
- 1 small onion, thinly sliced
- 1 jar (454 g) Frontera® Chipotle Salsa
- 1 can (411 g) Hunt’s® Diced Tomatoes, drained
- 15 mL apple cider vinegar
- 1 L shredded cooked chicken
- 2 mL salt
- 12 medium (15 cm) corn tortillas, warmed
- 1 avocado, peeled, halved, pitted and thinly sliced
- 60 mL grated añejo, Parmesan or Romano cheese
- 125 mL chopped cilantro

Step one
In large skillet set over medium heat, add oil. Add onion and cook, stirring occasionally, for 5 minutes or until tender-crisp and just beginning to brown. Stir in salsa, tomatoes and vinegar. Bring to a simmer and cook, stirring frequently, for 5 minutes or until thickened. Stir in chicken; season with salt.

Step two
Divide chicken mixture among tortillas. Serve with avocado, cheese and cilantro.
