Easy North African-Inspired Sausage Meatball Stew

Ingredients
- 2 cans (398 mL each) Hunt’s Heirloom® Crushed Tomatoes
- 2 tbsp (30 mL) olive oil
- 4 cups (1 L) diced butternut squash
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp (15 mL) minced fresh gingerroot
- 1 tsp (5 mL) ground cumin
- 1 tsp (5 mL) ground turmeric
- 1/2 tsp (2 mL) each salt and pepper
- 1 cup (250 mL) chicken broth
- 2 tsp (10 mL) harissa paste
- 1 lb (500 g) mild Italian sausages
- 2 zucchini, cut into 1/2-inch (1 cm) thick slices
- 1/4 cup (60 mL) finely chopped fresh parsley
- 2 tbsp (30 mL) finely chopped fresh mint
- 1 cup (250 mL) quinoa, cooked according to package directions

Step one
Heat oil in high-sided skillet or small Dutch oven set over medium heat. Cook squash, onion, garlic, ginger, cumin, turmeric, salt and pepper for 3 to 5 minutes or until fragrant. Stir in Hunt’s Heirloom® Crushed Tomatoes, broth and harissa; bring to boil. Cook for 15 minutes.

Step two
Remove casing from sausages; roll sausage meat into 1-inch (2.5 cm) meatballs. Stir meatballs and zucchini into stew. Cook, uncovered, for 10 to 15 minutes or until meatballs are cooked through and veggies are tender.

Step three
Stir in parsley and mint. Spoon over quinoa.
Tips
- Serve over couscous, brown rice or basmati rice instead of quinoa.
- Substitute turkey sausages for Italian sausages if desired.
