In large, heatproof bowl set over larger saucepan of simmering water, combine peanut butter, maple syrup, coconut oil and chocolate chips; heat, stirring constantly, for 1 to 3 minutes or until evenly melted.
In large bowl, pour peanut butter mixture over popcorn; toss to coat. Add coconut; toss to combine.
Scoop 1/2 cup (125 mL) portions onto parchment paper–lined tray. Shape into round nest shapes; using spoon, create divot in centre. Refrigerate for about 30 minutes or until set. Can be transferred to airtight container and refrigerated for up to 3 days. Fill each divot with jelly beans before serving.
