Ingredients
- 1 jar (341 mL) VH® Pineapple Jerk Sauce, divided
- 4 bone-in pork chops (each 8 oz/225 g and 1-inch/2.5 cm thick)
- PAM® Original Spray
- 4 fresh pineapple rings (each 1-inch/2.5 cm thick)
- 1/2 cup (125 mL) diced red pepper
- 1/4 cup (60 mL) diced red onion
- 1/4 cup (60 mL) lime juice
- 2 tbsp (30 mL) finely chopped fresh cilantro
- 1/4 tsp (1 mL) salt

Step one
Toss pork chops with 1 cup (250 mL) VH® Pineapple Jerk Sauce. Cover and refrigerate for at least 1 hour or up to 4 hours.

Step two
Preheat grill to medium-high heat; grease grate well with PAM® Original Spray. Grill pork chops for 5 to 7 minutes per side or until internal temperature registers 160°F (71°C) when meat thermometer is inserted into thickest part of pork chop and just blush of pink remains in centre. Let stand for 5 minutes.

Step three
Meanwhile, grill pineapple slices, basting with remaining VH® Pineapple Jerk Sauce for 3 to 5 minutes per side or until lightly charred. Let cool slightly and dice.

Step four
Stir together diced pineapple, red pepper, red onion, lime juice, cilantro and salt. Serve with jerk pork chops.
Tips
Serve over steamed rice or quinoa if desired.
