Lemon-Tahini Quinoa Salad with Chick’n Tenders

Prepare Gardein® Seven Grain Crispy Chick’n Tenders according to package directions. Cut into 1-inch (2.5 cm) pieces.
Whisk together tahini paste, lemon zest and lemon juice until smooth. Stir in 2 tbsp (30 mL) water, oil, garlic, salt, pepper and cayenne pepper.
In large bowl, toss together quinoa and half of the dressing. Stir in chopped Gardein® Seven Grain Crispy Chick’n Tenders, chickpeas, cherry tomatoes, red onion, olives and basil. Divide evenly among 4 plates; drizzle with remaining dressing.
Serve with AHA® Pineapple Passionfruit. Enjoy!
• Substitute lentils for chickpeas.
• Add 1 cup (125 g) chopped cucumbers if desired.
