Ingredients
- 2 tbsp olive or vegetable oil
- 2 zucchini, cut in 1-inch chunks
- 1 red pepper, chopped
- 1 medium eggplant, cut in 1-inch chunks
- 2 cloves garlic, minced
- 1 tsp dried oregano leaves (or 2 tbsp fresh)
- 1 can Aylmer® Accents® Italian Stewed Tomatoes (540 mL)
- 1 can chick peas (540 mL), drained and rinsed
Directions

Step one
Sauté vegetables, garlic and oregano for 5 minutes.

Step two
Add tomatoes, bring to boil then reduce heat and simmer covered for 15 minutes until vegetables are tender.

Step three
Stir in chick peas and simmer uncovered for 10 minutes, until excess moisture has evaporated.
