Ingredients
- 1 can (398 mL) Hunt’s® Early Harvest Heirloom Diced Tomatoes, drained
- 4 cups (544 g) seedless watermelon chunks
- 1/2 cup (125 g) granulated sugar
- 1/4 cup (32 g) packed fresh mint leaves
- 2 tbsp (30 mL) freshly squeezed lemon juice
- 1/8 tsp (0.5 g) salt
- Additional fresh mint leaves, for garnish

Step one
In blender, add tomatoes, watermelon, sugar, 1/4 cup (32 g) mint leaves, lemon juice and salt. Blend on HIGH for 1 minute or until smooth. Strain mixture through sieve over large bowl, stirring to push liquid through. Discard pulp.

Step two
Pour mixture into 8- by 4-inch (20 by 10 cm) loaf pan. Transfer to freezer and freeze, scraping top with fork every 30 to 40 minutes, for 3 to 4 hours or until ice crystals form.

Step three
Serve in cold small dishes or glasses and garnish with additional mint leaves.
