Ingredients
- 1 pkg (300 g) Gardein Crispy Chick’n Mandarin Orange nuggets
- 2 tbsp (30 mL) Canola oil
- 1 cup (250 mL) Diced yellow zucchini
- 1 cup (250 mL) Diced green zucchini
- 1 Onion, sliced
- 1 Clove garlic, minced
- 2 tsp (10 mL) Minced fresh ginger
- 1 cup (250 mL) Cooked white or brown rice, cooled
- 4 tsp (20 mL) Soy sauce
- 2 Green onions, thinly sliced
- 1 tsp (5 mL) Toasted sesame seeds

Step one
Prepare Gardein Crispy Chick’n Mandarin Orange nuggets according to package directions; toss nuggets in sauce.

Meanwhile, heat oil in wok or skillet set over high heat; cook yellow zucchini and green zucchini, and onion for 2 to 3 minutes or until starting to brown in spots. Stir in garlic and ginger; cook for 1 to 2 minutes or until well coated.

Step three
Stir in rice; cook for 3 to 5 minutes or until rice is heated through. Stir in soy sauce.

Step four
Divide between 2 bowls and top with Gardein Crispy Chick’n Mandarin Orange nuggets. Sprinkle with green onions and sesame seeds.
Tips
For a simple preparation, use prepared ready-made white or brown rice.
