Ingredients
- 30 mL olive oil
- 1 onion, diced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 2 mL salt, divided
- 2 mL black pepper, divided
- 250 mL paella rice
- 5 mL regular paprika
- 2 mL smoked paprika
- 1 mL saffron threads
- 1 can (398 mL) Hunt’s Heirloom® Diced Tomatoes (with juice)
- 425 mL sodium-reduced vegetable broth
- 15 mL red wine vinegar
- 170 g green beans
- 30 mL freshly squeezed lemon juice
- 1 pkg (283 g) Gardein™ Plant-Based F’sh Filets
- 30 mL finely chopped parsley
- Lemon wedges, for garnishing

Step one
In large skillet set over medium heat, add oil. Add onion, red pepper, garlic, 1 mL salt and 1 mL pepper; cook, stirring occasionally, for 3 to 5 minutes or until starting to soften.

Stir in rice, regular paprika, smoked paprika, the remaining salt, the remaining pepper and saffron; cook, stirring occasionally, for 1 to 2 minutes or until well coated.

Step three
Stir in diced tomatoes (with juice), broth and vinegar; bring to a boil. Reduce heat to medium-low; cook for 10 minutes. Stir in green beans; cook, stirring occasionally, for 10 to 15 minutes or until rice is tender and most of the liquid has been absorbed. Stir in lemon juice. Cover and let stand for 5 minutes.

Step four
Meanwhile, prepare Gardein™ Plant-Based F’sh Filets according to package directions.

Step five
Top paella with fillets. Garnish with parsley and serve with lemon wedges.
Tips
Substitute long-grain white rice for paella rice if desired.
