- PAM® Olive Oil No-Stick Cooking Spray
- 2 tbsp (20 g) Earth Balance® Vegan Cooking & Baking Sticks, divided
- 1 lb (454 g) boneless skinless chicken breasts, cut into 1-in (2.5 cm) pieces
- 1/2 cup (30 g) chopped fresh button mushrooms
- 1/2 cup (35 g) chopped yellow onion
- 2 tbsp (15 g) all-purpose flour
- 1 cup (250 mL) chicken broth
- 1 cup (250 mL) 2% milk
- 2 cups (160 g) shredded Cheddar cheese, divided
- 1/2 tsp (1 g) kosher salt
- 1/2 tsp (1 g) freshly ground black pepper
- 2 bags (each 240 g) instant white rice
- 1 bag (306 g) Swanson® Steamfresh® Sauced-Cheesy Broccoli

Step one
Preheat oven to 350°F (180°C).

Step two
Spray large oven-safe skillet with cooking spray and preheat over medium-high heat. Add 1 tbsp (15 g) buttery stick and stir to melt. Add chicken and cook, turning occasionally, for 8 to 10 minutes or until browned. Transfer to medium plate.

Step three
Melt remaining 1 tbsp (15 g) buttery stick in skillet and add mushrooms and onion. Cook, stirring occasionally, for 3 to 5 minutes or until softened.

Step four
Add flour and cook, stirring constantly, for 1 minute. Stir in broth and milk; bring to a boil; cook, stirring frequently, for 3 to 5 minutes or until thickened.

Step five
Stir in 1 cup (80 g) Cheddar, salt and pepper. Add rice, broccoli and chicken; stir until well blended. Top with remaining 1 cup (80 g) Cheddar.

Step six
Bake for 20 to 25 minutes or until bubbling.
Tips
If you don’t have an oven-safe skillet, you can transfer your cheesy chicken and rice to a casserole dish before topping with cheese and baking.
For variation, try using Swanson® Steamfresh® Sauced-Cheesy Broccoli, Cauliflower & Carrots.
