Ingredients
- 3 cups (384 g) cooked rotini noodles
- 1 can (425 g) chickpeas, drained and rinsed
- 1 can (398 mL) Hunt’s® Early Harvest Heirloom Diced Tomatoes, drained
- 1/2 cup (125 g) crumbled feta cheese
- 1/2 cup (125 g) diced peeled cucumber
- 1/2 cup (125 g) sliced olives
- 1/2 cup (125 g) diced red onion
- 1/4 cup (60 ml) olive oil
- 3 tbsp (45 mL) freshly squeezed lemon juice (1 to 2 lemons)
- 4 cloves garlic, minced
- 1/4 tsp (1 g) salt
- 1/8 tsp (0.5 g) freshly ground black pepper
- 1/3 cup (43 g) fresh (flat-leaf) Italian parsley (optional)
Directions

Step one
In large bowl, toss together rotini, chickpeas, diced tomatoes, cheese, cucumber, olives and onion.

Step two
In small bowl, whisk together oil, lemon juice, garlic, salt and pepper. Pour dressing over rotini mixture and toss to coat.

Step three
Garnish with parsley if desired and serve at room temperature or refrigerate until chilled.
