Chickpea Sweet Potato Tomato Stew

Ingredients
- 1 can of Chickpeas
- 2 398ml cans of Hunt’s Heirloom Diced
- 1 398ml can of Hunt’s Heirloom Crushed
- 3 TBSP of Hunt’s Tomato Paste
- 2 peeled and diced boiled Sweet Potatoes
- 1 Diced large Carrot
- 1 Diced Red Pepper
- 1 Litre of Vegetable Stock
- 1 Diced Onion
- 2 TBSP Cumin
- 1 TBSP Turmeric
- 1 bunch of Fresh Basil
Directions

Step one
Dice the carrot, red pepper, sweet potato and onion into small pieces. In a large pot over medium heat, add in olive oil and diced onion, carrot and pepper. Sauté the vegetables until they are softened.

Step two
Add in 3 tablespoons of Hunt’s Tomato Paste and mix with cooked vegetables. Add in the vegetable stock to deglaze. Add in the Hunt’s Heirloom Crushed and Diced cans to the soup. When it comes to a boil, add in the diced sweet potato, chickpeas, Cumin and Turmeric.

Step three
Reduce the heat to medium/low and simmer for 15-20 minutes, or until the sweet potatoes are fully cooked through.

Step four
Ladle the soup into separate bowls and top with fresh basil.
