Ingredients
- 1/2 jar (170 mL) VH® Pineapple Marinade
- 1/4 cup (60 mL) lime juice
- 2 tbsp (30 mL) olive oil
- 2 cloves garlic, minced
- 1 tsp (5 mL) ground cumin
- 1 lb (500 g) peeled deveined large shrimp, tail removed
- PAM® Original Spray
- 1/2 cup (125 mL) VH® Pineapple Marinade
- 1 cup (250 mL) sliced red onion
- 1/2 cup (125 mL) apple cider vinegar
- 1/2 tsp (2 mL) salt
- 4 pineapple rings (each 1/2-inch/1 cm thick)
- 1 avocado, halved, pitted, peeled and diced
- 1/3 cup (75 mL) finely crumbled feta cheese
- 1/4 cup (60 mL) finely chopped cilantro
- 8 corn tortillas, warmed
Directions

Step one
Shrimp al Pastor: Stir together VH® Pineapple Marinade, lime juice, oil, garlic and cumin; toss with shrimp until well coated. Let stand for 15 minutes.

Step two
Preheat grill to medium-high heat; grease grates well with PAM® Original Spray. Grill shrimp for 2 to 3 minutes per side or until starting to curl and cooked through.

Step three
Assembly: Toss together 1/4 cup (60 mL) VH® Pineapple Marinade, onion, vinegar and salt. Let stand for 15 minutes.

Step four
Meanwhile, toss pineapple with remaining VH® Pineapple Marinade; grill for 3 to 5 minutes per side or until lightly charred. Let cool slightly; dice.

Step five
Assembly: Layer shrimp, pineapple, avocado, pickled red onion, feta and cilantro in tortillas.

For a meatless alternative, substitute Gardein™ Fishless Filets for shrimp.
